Mushroom Gravy
Introduction
I know itโs weird to have this as a Basic, but we will actually use this recipe quite a few times in other recipes, like soups, to help thicken. It is rich, aromatic, and even my non-vegan family loves to put it on Thanksgiving turkey and Mashed Potatoes!
Total Time: 20 โ 30 minutes
Ingredients
ยฝ ย med. white onion,ย diced small
4ย oz. baby bella mushrooms, destemmed
and diced small
2ย cupsย vegetable broth
4ย Tbsp. all purpose flour
1ย ย ย tsp. dry thyme
1ย ย tsp. dry rosemary
1ย ย tsp. dry sage
ยฝย ย tsp. salt
ยฝย ย tsp. black pepper
Olive oil
Instructions
โข In a medium pot, heat about a Tbsp. of olive oil over med-high heat and sautรฉ the onion until it starts to become translucent, stirring regularly.
โข Add the mushrooms, thyme, rosemary, and sage and continue to sautรฉ until the mushrooms start to brown (a few minutes).
โข Add the flour and mix well, coating all of the onions and mushrooms. Continue to cook for another minute or so, stirring frequently.
โข Add the vegetable broth and remaining ingredients. Simmer for 10-15 minutes, uncovered, to thicken, stirring regularly.
