Introduction

This is one of those meals where I like to hit the easy button and use store-bought fajita seasoning.  If you’re more of a do-it-yourselfer, there are a million fajita seasoning recipes you can find.  I personally like the Ortega liquid seasoning, but feel free to find your favorite.  You can also manage the spice level with which seasoning you use, as well as by adding in some jalapenos or topping with your favorite salsa / hot sauce.

You can use this same principal for tacos, too.  Just use ground beef, taco seasoning, iceberg lettuce, diced tomatoes, and I recommend cilantro-lime rice.

Total Time: 45 – 60 minutes

•  In a large pan, wok, or skillet, heat a few Tbsp. of olive oil over high heat.  Sauté the onions, peppers, and mushrooms.  Everything will cook down, so don’t worry if your pan is overflowing a little.

•  We want the veggies to brown, so do NOT mix or flip very often (maybe every 3-4 minutes).

•  As the veggies are cooking, start to cook the rice according to package instructions. When the rice is almost, add the rinsed black beans and stir in.

•  Once all of the veggies have cooked down and are starting to brown, add the chicken and the fajita seasoning.  Continue to sauté until everything is good and hot, stirring regularly.

•  Serve on a tortilla with any fixings you’d like, such as sour cream, avocados, and salsa.
