Brownies
Introduction
These arenโt too sweet but certainly still satisfy any cravings. You can up the sweetness by adding another ยผ cup of sugar or by topping with powdered sugar, if youโd like. Iโm more of a purist and prefer to leave out the nuts, but you can also add in 1 cup of chopped nuts, depending on your preferences. This will yield a typical 9 or so brownies in an 8 x 8 inch baking dish.
Total Time: about 1 hour
Ingredients
1ย ย ย ย cup sugar
โ
ย ย cupย butter, melted
2ย ย ย oz. chocolate, melted or powder (2 baking squares or 6 Tbsp. cacao powder)
1ย ย ย tsp. vanilla extract
โ
ย ย cup flour, sifted
1ยฝย ย ย tsp. baking powder, sifted with the flour
3ย ย ย tsp. sugar
โ
ย ย cup water
2ย ย ย Tbsp. flaxseed
6ย ย ย Tbsp. water
Optional:ย ย ย
1 cup of chopped nuts, such as pecans
Instructions
โข Preheat the oven to 350ยฐF.
โข Using a small blender (I use a Bullet), blend the flaxseed and water for about 30 seconds, or until gooey.
โข In a large bowl, combine the flax seed goo, sugar, butter, chocolate, salt, vanilla, and water. Mix well until creamy.
โข Sift the flour and baking powder directly into the bowl. Mix well so there are no clumps.
โข If you are adding nuts, do that here and mix them in.
โข Pour the batter into a non-stick 8 x 8 inch baking dish.
โข Bake for 45 โ 50 minutes, or until a toothpick or knife comes out clean after poking the middle.
โข If topping with powder sugar, sift or use a metal strainer to evenly dust the top.
