Pasta Bolognese

Introduction

One of the classic Italian pasta sauces is Bolognese.  You can use this recipe with any type of pasta, including in a lasagna.  I like to use a veggie pasta, personally.  For the red wine, I prefer something heavier, like a Zinfandel or Cabernet, but feel free to use what you have, since we donโ€™t need much.  The addition of the milk helps to cut the acidity of the tomatoes.  Note the simmer time and plan accordingly!  I also recommend some garlic bread to go along with this meal.

โ€ข  In a large pot, sautรฉ the onion, carrot, and celery with a few Tbsp. of olive oil.  Cook until the onion starts to become translucent, stirring regularly.

โ€ข  Add the garlic and continue to sautรฉ for another minute or two.

โ€ข  Add the ground beef.  Continue to sautรฉ and break up the meat into small pieces using the spatula.

โ€ข  When the meat is almost done, add the red wine.  Continue to cook for another minute to let some of the liquid evaporate.

โ€ข  Add the remaining ingredients (except for the milk and pasta), mix everything together, cover, and simmer on low heat for 2-3 hours.

โ€ข  When the sauce is getting close to done, cook the pasta according to package instructions.

โ€ข  A couple of minutes prior to serving, add the milk to the sauce and stir it in.
