Shepherdโs Pie
Introduction
Really hearty, really delicious. It can be a bit time-consuming to make, though, so plan ahead. Iโve heard of people putting a pie dough across the top of this to make it more of a โpieโ, but that seems a bit excessive to me (but you do you!). This completely fills my 12โ skillet, so if you only have a smaller one then Iโd recommend a casserole dish instead.

Ingredients
ยฝ Mashed Potatoes recipe
2 carrots, peeled and diced
1 yellow onion, diced
8 oz. baby bella or porcini mushrooms, destemmed and diced
3 cups vegetable broth
ยผ cup red wine
ยพ lb. ground beef
2 Tbsp. garlic, minced
2 Tbsp. all purpose flour
1 Tbsp. tomato paste
1 Tbsp. fresh thyme (about 1 tsp. dry)
2 tsp. Worcestershire sauce
1 tsp. salt
1 tsp. black pepper
1 bay leaf
Olive oil
Instructions
โข Make the Mashed Potatoes. Cover and set aside when done.
โข While the potatoes are cooking, heat a couple Tbsp. of olive oil over med-high heat in an oven-safe skillet (if using; if you will use a baking dish instead of a skillet for the baking, then just a large pan or pot will do) and sautรฉ the onions until they start to become translucent, stirring regularly.
โข Add the mushrooms and continue to sautรฉ until they start to brown (a few minutes).
โข Add the garlic and continue to sautรฉ for a couple more minutes.
โข Add the beef, breaking it apart as it cooks into small pieces using a spatula.
โข Once the beef is cooked, add the remaining ingredients (except the mashed potatoes).
โข Simmer for 30 โ 45 minutes, uncovered.
โข Preheat the oven to 400ยฐF.
โข After simmering and when the mashed potatoes are done, remove the skillet from the heat (or if you are NOT using a skillet, transfer meat/onions to a 9ร13 inch baking dish). Carefully spoon the potatoes on top of the beef mixture. The potatoes will want to mix with the beef mixture, but do your best to keep the potatoes as the top layer (though it doesnโt matter much if they do mix a little). You can also use a piping bag or a gallon bag with a corner cut off to pipe the potatoes on top, but for me this always makes more of a mess.
โข Gently smooth the potatoes out to create a nice top layer of the pie. If you are adding a pie crust, lay it on top of the potatoes and push it down on the edges of the pan/dish to try and seal everything in.
โข Bake until the potatoes start to brown on top (around 30 minutes).
