Spaghetti & Meatballs

Introduction

โ€ข  Preheat the oven to 400ยฐF.

โ€ข  In a medium pan, heat about a Tbsp. of olive oil and sautรฉ the onion until it starts to become translucent, stirring regularly.

โ€ข  Add the garlic and continue to sautรฉ for another couple of minutes.

โ€ข  In a small blender (I like to use a Bullet), blend the flax seed and water for about 30 seconds or until gooey.  This will help everything bind together.

โ€ข  Add all other ingredients (except the pasta) into a large bowl.  Using your hands, mix everything together well.

โ€ข  Continue using your hands to take a small amount, about ยผ to โ…“ cup, of the meat and roll it into a ball (it should be a little larger than a golf ball).

โ€ข  Place the meatballs on a non-stick baking sheet or silicon baking mat.  Bake for 25 minutes.

โ€ข  While the meatballs are baking, cook the pasta according to package instructions.  Drain and plate when done.
