Spaghetti & Meatballs
Introduction
An Italian classic that isnโt hard to make. You can use whatever pasta you want; I usually go for Barilla veggie spaghetti. I also typically just buy jarred pasta sauce, but feel free to make some homemade sauce if youโd like. Add a side Caesar salad and enjoy!
Total Time: 45 minutes – 1 hour
Ingredients
1ยฝ lb. ground beef
ยฝ medium white onion, diced small
ยฝ cup fresh parsley, chopped
ยผ cup fresh oregano, chopped
ยฝ cup bread crumbs
ยฝ cup milk
2 Tbsp. garlic, minced (about 4 cloves)
2 Tbsp. flax seed
5 Tbsp. water
1 tsp. salt
1 tsp. black pepper
3 lbs. pasta
Olive oil
Instructions
โข Preheat the oven to 400ยฐF.
โข In a medium pan, heat about a Tbsp. of olive oil and sautรฉ the onion until it starts to become translucent, stirring regularly.
โข Add the garlic and continue to sautรฉ for another couple of minutes.
โข In a small blender (I like to use a Bullet), blend the flax seed and water for about 30 seconds or until gooey. This will help everything bind together.
โข Add all other ingredients (except the pasta) into a large bowl. Using your hands, mix everything together well.
โข Continue using your hands to take a small amount, about ยผ to โ cup, of the meat and roll it into a ball (it should be a little larger than a golf ball).
โข Place the meatballs on a non-stick baking sheet or silicon baking mat. Bake for 25 minutes.
โข While the meatballs are baking, cook the pasta according to package instructions. Drain and plate when done.
