Enchilada Casserole
Introduction
A different take on enchiladas with all the same flavor. This recipe can take a little while to make, but itโs worth the effort if you have the time. This does come fairly close to filling my 8-cup blender, so if you have a smaller one you may want to blend in batches. You can also make the Queso a day or two in advanced and refrigerate, if youโd like (which I highly recommend to help reduce the effort the day-of).

Ingredients

3ย ย ย 15 oz. cans fire-roasted diced tomatoes
2ย ย ย medium yellow onions, oneย dicedย and one rough chopped
3ย ย ย bell peppers, diced
12ย ย ย oz.ย ground beef
1ย ย ย 15 oz. can black beans
1ย ย ย ย 15 oz. can pinto beans
1ย ย ย ย 4 oz. can green chiles, diced
3ย ย ย Tbsp. garlic (about 6 cloves)
2ย ย ย tsp. salt
3ย Tbsp. chili powder
3ย ย ย tsp. cumin
3ย ย ย tsp. dry oregano
ยผย ย ย cup maple syrup
2ย ย ย cups shreddedย cheese
18 ย ย corn tortillas
Optional Toppings:ย
Sour cream
Choppedย scallions
Avocado slices
Jalapeno slices
Corn kernels
Salsa.
Instructions
โข Make the Queso, cover, and set aside (or in the fridge).
โข In a large pan or wok, sautรฉ the diced onion and bell peppers with a couple Tbsp. of olive oil over med-high heat until the onions start to become translucent, stirring regularly.
โข Add the beef to the pan/wok and continue to sautรฉ until the beef has browned.
โข In a large blender, add the rough chopped onion, diced tomatoes, garlic, salt, chili powder, cumin, oregano, and maple syrup. Blend until smooth. This is the enchilada sauce.
โข Preheat the oven to 375ยฐF.
โข Add the blended mixture to the pan/wok with the onions and peppers, along with the beans and green chilis.
โข Stir everything in the pan/wok together and simmer for about 10 minutes to let the flavors mingle, stirring occasionally.
โข In a large, 10 x 15 inch casserole dish, spread about ยพ cup of the Queso on the bottom to help reduce sticking. Cut the corn tortillas in half (into semi-circles) and place a layer of tortillas on top of the Queso. I use 6 full tortillas per layer, so 12 halves.
โข Spread about ยฝ of the remaining Queso on top the tortilla layer.
โข Spread about ยฝ of the onion/bean filling on top of the Queso.
โข Place another layer of tortillas on top of the filling. Top these tortillas with the remaining Queso and then the remaining filling.
โข Place the last layer of tortillas on top. Spread the shredded cheese evenly on top the tortillas.
โข Bake for 30 minutes. The cheese may not melt (depending on what you used). Often times I can turn on the broiler in the oven for just a minute or two to get the cheese to melt, but some cheeses are just better at melting than others. If it doesnโt melt, the flavor will still be there, so donโt worry too much.
โข After the baking is complete, top with anything you would like, such as avocados, scallions, and sour cream.
