Garlic Mashed Potatoes

Introduction

Goes with everything, in my opinion.  Mashed potatoes are pretty much vegan anyway, but here we will use vegan milk and butter.  I prefer to use golden potatoes, but you can substitute Russet (white) potatoes, too.  I also like to leave my potato skins on, but feel free to peel your potatoes if you prefer.  I boil the potatoes with a little garlic to help infuse the garlic flavor a little bit more.  Oh, and donโ€™t forget the Gravy!  Warning:  this makes A LOT of mashed potatoes (which is just the way I like it)!

โ€ข  In a large pot, place the potatoes, 1 Tbsp. of the garlic, and fill generously with water.  Bring to boil and continue to boil until the potatoes are very fork tender (i.e. you can stab them with a fork easily).

โ€ข  Drain the water from the pot, but try to keep the potatoes inside.  To do this, I like to crack the lid just a crack, stretch a kitchen towel across the lid, and hold the towel tight along with the pot handles (the towel should keep the lid from moving).  Then, I slowly tilt the pot and drain the water.  You can use a colander, but I always wind up losing a bunch of potatoes this way; if you do use a colander, return the potatoes to the pot when drained.

โ€ข  Add the butter to the potatoes and close the lid.  Give the butter a few minutes to melt (you can bury the butter under the potatoes to make this go faster).

โ€ข  Once the butter has melted, add the milk, garlic, salt, and pepper.  Using a potato masher, mash the potatoes well.  This will also mix the butter, milk, and garlic into the potatoes.

โ€ข  Add the parsley and chives.  Mix well.  (we wait to do this because otherwise these ingredients will clog up the potato masher)

โ€ข  OPTIONAL:  I like to use a hand mixer and whip the potatoes.  This will make them creamier and smoother.  But, if you prefer some chunks, you can skip this step.
