Sweet & Sour Chicken

Introduction

Such a great change-of-pace meal!ย  Itโ€™s sweet, itโ€™s sour, itโ€™s delicious.ย  Iโ€™ve included a recipe to make your own sauce, but you can just as easily buy a couple jars of your favorite sauce, too.ย  You can also use extra firm tofu instead of the chicken, if youโ€™d like.ย  Just cube the tofu, mix with the same coating, and bake at 400ยฐF for 30 minutes, flipping halfway through (you want the tofu to be a little crispy).

Ingredients

Sauce
1ย  ย  ย ย cup pineapple juice (from the can used above)
ยพ ย  ย  cup brown sugar, packed
ยผ ย  cup rice vinegar
ยผ ย  ย  cup water
4ย  ย  ย Tbsp. corn starch
3ย  ย  ย Tbsp. soy sauce
2ย  ย  ย Tbsp. ketchup

Variation:ย 
Substitute extra firm tofu (cubed) for the chicken and flip the tofu cubes halfway through the baking process.

Instructions

โ€ข  Preheat the oven to 350ยฐF.

โ€ข  If you are making your own sauce, do that now and follow the instructions below.

โ€ข  Add the chicken pieces to a large bowl.  Drizzle the sesame oil and soy sauce on top.  Mix well.

โ€ข  Sprinkle the cloves, cinnamon, flour, and black pepper onto the chicken.  Mix well again, trying to get an even coating on all the chicken pieces.

โ€ข  Spread the chicken out on a non-stick baking sheet or baking mat into a single layer (try to not have any pieces stacked on top of each other, but itโ€™s not the worst thing if they do stack a little).  Bake for 30 minutes.

โ€ข  While the chicken is baking, in a large pot or wok heat a few Tbsp. of olive oil over med-high heat and sautรฉ the onion and bell peppers until the onions start to become translucent, stirring regularly.

โ€ข  Add the garlic and continue to sautรฉ for another couple minutes.

โ€ข  Add the remaining ingredients (except for the scallions), including the sauce and chicken (when finished baking).  Simmer for about 10 minutes, uncovered, to let the sauce thicken.

โ€ข  Cook the rice according to package instructions.

โ€ข  Spoon the rice into bowls and top with the sweet and sour chicken mixture.  Garnish with the scallions.

IF YOU ARE MAKING THE SAUCEโ€ฆ

โ€ข  Strain and measure the pineapple juice from the cans you will use.

โ€ข  In a medium bowl, mix the water and corn starch together so there are no lumps.

โ€ข  Add the remaining sauce ingredients and mix well.  Set aside until ready to use.
