Going Vegan Has Never Been So Easy
Jambalaya

Introduction
A Cajun treat! In a lot of regions, it can be difficult to find fresh okra. If youโre lucky enough to have them available, fantastic! If not, hopefully you can find them in the frozen aisle. Or you can ignore that particular ingredient and still make a wonderful dish reminiscent of New Orleans. I prefer bratwurst in this recipe, but you can also use spicy Italian or even add 1 tsp of red pepper flakes if you want to spice things up. As-is, I would call this medium spice.

Ingredients
3 cups white rice
ยพ lb. sausage links
ยพ lb. chicken pieces
1 yellow onion, diced
2 bell peppers, diced
2 celery ribs, diced
16 oz. crushed tomatoes
5 cups vegetable broth
1 cup scallions, diced
2 Tbsp. garlic, minced (about 4 cloves)
2 Tbsp. Cajun / Creole seasoning
2 tsp. Worcestershire sauce
1 tsp. salt
1 tsp. dry thyme
1 tsp. dry oregano
ยฝ tsp. black pepper
1 bay leaf
Olive oil
Optional:
12 oz. frozen okra (about 1ยฝ cups)
Instructions
โข Grill or otherwise cook the sausage links. Slice the links into pieces and set aside.
โข In a large pot or wok, sautรฉ the onion, bell peppers, and celery over med-high heat with a few Tbsp. of olive oil until the onions start to become translucent, stirring regularly.
โข Add the garlic and continue to sautรฉ for another couple of minutes.
โข Add all other ingredients (except the rice and scallions), including the sliced sausage, and bring to a simmer. Simmer for 30 minutes, uncovered, to bring all the flavors together.
โข Add the rice and continue to simmer until the rice is cooked (most of the liquid should be absorbed).
โข Remove the bay leaf and serve. Top with the chopped scallions.
