Going Vegan Has Never Been So Easy
Waffles
Introduction
You do need a waffle iron for this one, of course. Otherwise, the ingredients we need to worry about with waffles are the milk, egg, and butter. Just like with baked goods, we also need to up the baking powder (because vegan butter is heavy) to make sure these come out fluffy. You can also try the same variations I recommend for pancakes, since waffles are very similar, but my personal favorite is banana nut for the waffles. This makes about 8 waffles in my medium-sized waffle iron.
Total Time: 20 โ 30 minutes
Ingredients
2 cups all purpose flour
2 cups milk
6 Tbsp. butter, melted
3 Tbsp. sugar
3 tsp. baking powder
ยฝ tsp. salt
1 tsp. vanilla
2 Tbsp. flax seed
5 Tbsp. water
Variations:
Banana Nut:
1 cup diced banana
1 cup chopped walnuts
ยฝ tsp. cinnamon
Berry Blast:
ยฝ cup blueberries
ยฝ cup raspberries (halved)
ยฝ cup blackberries (halved)
Banana Cinnamon:
2 bananas (diced)
1 Tbsp. cinnamon
Pumpkin:
1 15 oz. can pumpkin puree
1 tsp. allspice
1 Tbsp. cinnamon

Chocolate Chip:
1 cup chocolate chips
Whole Wheat:
Substitute whole wheat flour for white flour
Add an additional ยผ cup of milk
Instructions
โข In a small blender (I use a Bullet), blend the flax seed and water until gooey (about 30 seconds).
โข In a large bowl, combine the flax seed with the rest of the ingredients and mix well so there are no lumps.
โข If you are adding in any additional ingredients (fruit, nuts, etc.), do that now and mix well.
โข Heat your waffle iron.
โข Using a ladle, transfer about a ladle-full of the batter into your waffle iron and cook according to the ironโs instructions.
