Queso
Introduction
Itโs not Velveeta, but this is still really great as a dip or smothered on top of tacos or enchiladas. You can make this as spicy or mild as youโd like by keeping the white membranes and seeds within the jalapeno or removing them (the seeds and white parts are the spiciest part of the jalapeno), as well as adding more jalapenos, green chilis, or red pepper flakes. As-is, I would rate this queso as rather mild.
You can also up your queso game and make it Fiesta Style! You just need some beef, some meatless chili (I use Hormel), and a couple cans of Rotel (or similar). I personally like the tomato and green chili Rotel (mild), but feel free to use your favorite.

Ingredients
ยฝ ย medium cauliflower head (florets only)
2ย ย Tbsp. garlic, minced
ยฝย ย medium yellow onion,ย rough chopped
1ย ย ย jalapeno, deseeded, de-membraned, and sliced in half length-wise
ยฝ ย ย cup raw cashews
2ย ย ย Tbsp. corn starch (or tapioca starch)
2ย ย ย tsp. paprika
2ย ย ย tsp. cumin
2ย ย ย tsp. garlic powder
2ย ย ย tsp. onion powder
1ย ย ย tsp. salt
ยฝ cup nutritional yeast
2ย ย ย Tbsp. white wine vinegar
1ย ย ย Tbsp. olive oil
ยพย ย ย cupย milk
ยพย ย ย cup water
Fiesta Queso:
1 10 oz. can meatless chili
ยพ lb. beef
20 oz. Rotel (tomato & green chili)
Instructions
โข Boil the cashews in water for 45 minutes to soften them.
โข Preheat the oven to 425ยฐF.
โข On a non-stick baking sheet or baking mat, place the cauliflower florets, onion, and jalapeno. Bake for around 30 minutes, or until the cauliflower starts to brown.
โข Add all remaining ingredients to a large blender. When the vegetables are done baking, add them too. When the cashews are done boiling, drain and add them too.
โข Blend on high for a couple minutes or until there are no chunks whatsoever.
โข If serving immediately, move the queso to a medium pot and heat under low heat to warm it up. If not, then place in a container, cover, and refrigerate.
โข If you are making Fiesta Queso, brown the meat in a skillet and add the chili. When done, add to the pot with the queso.
โข Drain the juice from the cans of Rotel (it will thin out the queso too much) and add to the pot with the queso.
โข Fold the meat and Rotel into the queso with a spatula or large spoon.
