Apple Pie

โ€ข  Preheat the oven to 400ยฐF.

โ€ข  Spread one pie dough in a 9 inch pie dish.  Take 2 Tbsp. of the flour and spread it out evenly across the bottom of the dough.  (This will help with some of the liquid that the apples will excrete while cooking)

โ€ข  Peel, core, and slice the apples thin.  Place the apple slices on top of the pie dough in the dish.  It may look like you have too many apples, but they cook down, so donโ€™t worry.

โ€ข  Spread the lemon juice and vanilla extract over the top of the apples.

โ€ข  In a small bowl, mix the sugar, brown sugar, remaining 2 Tbsp. flour, cinnamon, nutmeg, and allspice.  Mix everything together so it is uniform.

โ€ข  Carefully sprinkle the sugar mixture over the top of the apple slices.

โ€ข  Place the 2nd pie dough over the top of the apples.  You can get creative here and slice the pie dough into strips, or you can just cover the apples completely.  If you are covering the apples completely, take a knife and add a few slits in the dough to allow air to escape.

โ€ข  Try to crimp the top layer of dough into the bottom layer of dough around the edges of the pie dish.  This will help to keep all of the apples and their juices from escaping while baking.

โ€ข  Lastly, using a pastry brush or similar, spread the melted butter on the top of the pie dough.  This will help us get a nice golden-brown color and keep the top crust flakey and delicious.

โ€ข  Bake for 30 minutes, or until the top of the pie is starting to brown.

โ€ข  Remove from the oven and carefully cover the pie with foil.  The foil will stop the pie crust from further browning but still allow the rest of the pie to keep cooking.  Return to the oven, reduce the heat to 375ยฐF, and bake for another 35 minutes.

โ€ข  Let the pie mostly cool before cutting.  This will allow some of the juices to thicken.
