Chicken Noodle Soup
Introduction
All the down-home flavors but vegan.ย Guaranteed to warm you up on a cold day.ย For the pasta, try something smaller, like a fusilli, orecchiette, or even an orzo; the idea is to be able to get everything together in one spoonful.

Ingredients
1ย ย ย yellow onion,ย diced
3ย ย carrots, peeled and diced
6ย ย cupsย vegetable broth
2ย ย celery ribs, diced
3ย ย Tbsp. nutritional yeast
2ย ย bay leaves
3ย ย tsp. fresh thyme, minced (about 1ยฝ tsp. dry)
2ย ย cups water
1ยฝย lbs.ย chicken
3ย ย Tbsp. fresh parsley (about 1ยฝ Tbsp. dry)
1ย ย ย lb. pasta
2ย ย Tbsp. garlic, minced (about 4 cloves)
1ย ย ย tsp. salt
1ย ย ย tsp. black pepper
Olive oil
Donโt want the chicken? Substitute in 2 โ 15oz. cans of cannellini beans.
Instructions
โข In a soup pot, heat a couple Tbsp. of olive oil over med-high heat and sautรฉ the onions, carrots, and celery until the onion starts to become translucent, stirring regularly.
โข Add the garlic, nutritional yeast, and thyme and continue to sautรฉ for another couple of minutes.
โข Add all other ingredients (except for the pasta) and simmer for 30 โ 45 minutes, covered.
โข Around 15 minutes prior to serving, add the pasta. Continue to simmer, covered, until the pasta is cooked.
โข Discard the bay leaves prior to serving.
