Chicken & Dumplings
Introduction
This is an old family recipe that I modified. You can make your own Biscuit dough, if youโd like, but I usually just buy a tube (Pillsbury or other). Store bought โOriginalโ biscuits should be vegan, but check the label to make sure. It may say โmight contain milk ingredientsโ, but that just means it was processed in the same facility as other products that do contain milk ingredients. You can make the Gravy a day earlier, if you want, to save a little time.

Ingredients
1ย ย ย ย Mushroom Gravyย recipe
2ย ย ย carrots, peeled andย diced
3ย ย ย celery ribs, diced
1ยฝย ย lbs.ย chickenย pieces
ยฝ ย ย white onion, diced
8ย ย ย cupsย vegetable broth
4ย ย ย oz. baby bella mushrooms, diced
2ย ย ย tsp. poultry seasoning
ยฝ ย ย tsp. white pepper
16ย ย oz. biscuit dough (about 8 biscuits)

Instructions
โข Make the Gravy. Cover and set aside until ready to use.
โข In a soup pot, heat a few Tbsp. of olive oil over med-high heat and sautรฉ the onions, carrots, celery, and mushrooms until the onions start to become translucent.
โข Add all other ingredients (except the biscuit dough), including the gravy, and bring to a simmer. Simmer for about 1 hour, covered.
โข When the soup is getting close to having simmered for an hour, chop the biscuit dough into pieces. I usually get 16 pieces per biscuit, so 3 cuts in one direct and 3 cuts in another, creating 4ร4 pieces. Separate the pieces and add them to the pot.
โข Repeat until all the biscuit dough has been chopped and added. Mix the dough into the soup, covering all the pieces.
โข Cover and simmer for another 15 minutes to let the dough cook. Some of the dough is going to dissolve into the liquid of the soup, which is going to add a bit of sweetness. The more you stir the soup, the more dough will be dissolved. So after the first mixing of the dough pieces into the soup, donโt stir any further!
โข When done, ladle into a bowl and enjoy!
