โ€ข  In a soup pot, heat a few Tbsp. of olive oil over med-high heat and sautรฉ the onions, carrots, celery, and mushrooms until the onions start to become translucent.

โ€ข  Add all other ingredients (except the biscuit dough), including the gravy, and bring to a simmer.  Simmer for about 1 hour, covered.

โ€ข  When the soup is getting close to having simmered for an hour, chop the biscuit dough into pieces.  I usually get 16 pieces per biscuit, so 3 cuts in one direct and 3 cuts in another, creating 4ร—4 pieces.  Separate the pieces and add them to the pot.

โ€ข  Repeat until all the biscuit dough has been chopped and added.  Mix the dough into the soup, covering all the pieces.

โ€ข  Cover and simmer for another 15 minutes to let the dough cook.  Some of the dough is going to dissolve into the liquid of the soup, which is going to add a bit of sweetness.  The more you stir the soup, the more dough will be dissolved.  So after the first mixing of the dough pieces into the soup, donโ€™t stir any further!
