Going Vegan Has Never Been So Easy
Cornbread
Introduction
A Southern classic, this cornbread recipe is moist and perfect as a side, an appetizer, or a dessert.ย I bake mine in a 12โ cast-iron skillet, but you could also use a 9โx13โ baking dish.ย I also use yellow corn meal, but you could substitute white or blue.
Total Time: 30 โ 40 minutes
Ingredients
2ย ย cupsย cream
2ย ย cups white flour
2ย ย cups corn meal
โ
ย cup sugar
ยฝย ย ย cupย butter, melted
2ย ย tsp. salt
2 ย ย Tbsp. flax seed
6ย ย ย Tbsp. water
Instructions
โข Heat the oven to 425ยฐF.
โข In a large bowl, add the cornmeal and cream. Mix well with an electric mixer.
โข In a small blender (I like to use a Bullet), combine the flax seed and water. Blend until gooey (about 30 seconds). Add the goo to the bowl and mix.
โข Add the sugar, baking powder, butter, and salt to the bowl and mix well.
โข Slowly add in the flour. You can spoon the flour into the bowl while mixing to make it easier.
โข Transfer the batter to a non-stick skillet or baking dish. It will be thick, so use a spatula to spread it around evenly.
โข Bake for 25 minutes, or until the edges start to brown and a toothpick/knife comes out clean after poking the middle.
