Introduction

You are probably asking, โ€œarenโ€™t all tomato soups vegan?โ€ย  Well, no.ย  Most tomato soups have butter and milk.ย  But otherwise, sure, feel free to just substitute these ingredients into an existing tomato soup recipe, if youโ€™d like.ย  But this is the recipe that Iโ€™ve found to be both really easy and really wonderful.ย  The milk is crucial to cutting the acidity of the tomatoes.ย  This recipe does require a blender (preferably an immersion blender) along with very hot liquid!ย  Be careful!

Also, don’t forget the grilled cheese! As of this writing, I still do NOT recommend any vegan cheddar or American cheeses. I personally use a smoked gouda.

โ€ข  In a soup pot, heat a few Tbsp. of olive oil over med-high heat and sautรฉ the onions until they start to become translucent, stirring regularly.

โ€ข  Add the garlic and continue to sautรฉ for another couple of minutes.

โ€ข  Add the flour and stir well, coating the onion evenly.  Continue to cook for another minute or so, stirring constantly.  It will want to stick, but donโ€™t worry if it does; the liquid we are about to add will clean up the bottom of the pot.

โ€ข  Add all remaining ingredients (except for the milk) and simmer for at least 30 minutes, covered, stirring occasionally.

โ€ข  Around 10 minutes prior to serving, blend the soup using a blender until smooth.  An immersion blender makes this very easy, but if using a regular blender, youโ€™ll need to split this into batches.  (And be careful!  Hot liquids tend to want to explode in a blender.)

โ€ข  Remove from heat and add the milk.  Mix well.

โ€ข  The soup will stay hot for a while if you now want to make some grilled cheese (I assume I donโ€™t need to specify how to make a grilled cheeseโ€ฆ).
