Introduction

This is another family recipe made vegan.ย  And I promise you, this will be one of the best pumpkin breads you will have ever tried!ย  Itโ€™s incredibly moist and flavorful.ย  You do need to make sure you get the cook and serve pudding mix and NOT the instant pudding mix.ย  This makes 2 loaves in 8x4x4 inch loaf pans, so plan ahead.

โ€ข  Preheat the oven to 325ยฐF.

โ€ข  In a large bowl, combine all the ingredients together (including the flaxseed goo) and mix it well so there are no lumps.  The batter will be pretty thick, so you can use an electric mixer if youโ€™d like.

โ€ข  Take 2 โ€“ 8x4x4 inch loaf pans, a paper towel, and some cold butter and use the paper towel to spread the butter on the inside of the pan.  This works much better than a non-stick spray, so I highly recommend this so the bread doesnโ€™t stick.  I probably use about 1 Tbsp. of butter per pan.

โ€ข  Divvy out half of the batter into each of the loaf pans.  The batter should come to about 2/3 of the way to the top of the pan.

โ€ข  Place the loaf pans on a baking sheet to help catch any batter that might spill over.  Place in the oven and cook for 1ยผ hours.

โ€ข  Let the bread cool for 15-20 minutes before trying to remove from the pans.
