Introduction

The issue with usual French toast is the egg.  Here, we will use a flaxseed mixture to mimic the gooey-ness of a beaten egg, which is what helps coat the bread slices.

You can use your favorite bread (or whatever you happen to have available) here, but in my opinion the best breads to use are Challah, Brioche, or a cinnamon raison bread (just check to make sure the bread is vegan; not all are).  Of course there are whole wheat and low carb options, too, if thatโ€™s more your flavor.  If youโ€™re using cinnamon bread, then you can skip the cinnamon in the ingredients.  This should make 12-15 slices of toast, depending on how big the bread slices are.

Note:  If using a cinnamon bread, leave out the cinnamon above

Instructions

โ€ข  Heat a large pan or flat-top skillet over medium heat.  We want it to be hot as soon as we are ready.  You also want as large of a pan as you have so you can get multiple bread slices and not have to cook them one at a time.

โ€ข  In a small blender (I like to use a Bullet), blend the flaxseed and water until itโ€™s gooey (around 30 seconds).

โ€ข  In a bowl, add all ingredients (except the bread), including the flaxseed, and whisk well.

โ€ข  The flaxseed will really want to stick to the pan/skillet, even my non-stick skillet, so I recommend spreading a little butter on the pan.  But this is optional.

โ€ข  Dip a bread slice into the batter, coating both sides well.  Allow the excess to drip off for a few seconds.

โ€ข  Place the bread slice on the pan/skillet.  Repeat for as many slices as will fit on your pan/skillet.

โ€ข  Let the slices cook for 2 โ€“ 3 minutes, then flip.  If your slices arenโ€™t golden brown, then make a note to let them cook on each side for an extra minute or two.

โ€ข  Repeat until either all the bread or all the batter is used.
