Going Vegan Has Never Been So Easy

Introduction

A breakfast classic that is easy to make and sure to please.  You do need to freeze the butter, so plan ahead.  You can top these with more butter, jam, honey, or anything youโ€™d like!  This should make about 12 biscuits.

Total Time: 30 โ€“ 45 minutes (not counting freezing the butter)

โ€ข  Take the butter and slice it thin.  Place each slice on some parchment or wax paper.  When all the butter has been sliced, wrap it up in the paper and place in the freezer for at least 2 hours (preferably overnight).

โ€ข  Combine all ingredients, except for the butter and milk, into a large bowl.

โ€ข  Heat the oven to 425ยฐF prior to continuing!  The rest needs to be done quickly, so make sure everything is ready to go for the following steps.  We want the butter and milk to stay as cold as possible until we get the biscuits in the oven, so work fast!

โ€ข  Add all ingredients together in a bowl, including the milk and butter, and combine together using a pastry cutter.

โ€ข  Use your hands to finish the mixing for just a minute or so to minimize how much heat you expose the dough to, as well as to not overwork the dough.

โ€ข  Place some parchment paper on the counter and spread a little flour on top to help the dough to not stick.  Dump the dough onto the paper.

โ€ข  If the dough is too sticky, add just a little more flour (and also add a note so you remember this next time!  No sense in wasting precious time).  Youโ€™ll know if it is too sticky, trust me.

โ€ข  Using your hands (do NOT use a rolling pin), flatten the dough to about 1 inch thick.  Fold it in half on top of itself, and then fold it in half again on top of itself.  (this will help to create some layers in our biscuits)

โ€ข  Use your hands to flatten the dough again to about 1 inch thick.  Use a circular cookie cutter and cut out as many circles as you can, placing them on a non-stick baking sheet.

โ€ข  Fold the remaining dough on top of itself again and proceed to spread the dough out to about 1 inch thick.  Again use a cookie cutter to cut out circles.  Repeat this until all of the dough is gone.

โ€ข  Bake for 12-15 minutes, or until the tops are just starting to brown.
