Going Vegan Has Never Been So Easy

Introduction

A Spanish classic, this recipe isnโ€™t very difficult and tastes fantastic.ย  Unfortunately, I havenโ€™t found a good seafood substitute, so instead weโ€™ll use veganย chickenย andย sausage.ย  Spanish rice (the yellow rice with saffron; I like to use Vigo brand) is just delicious, and I prefer spicy Italian sausage to give this a little kick (but feel free to use your favorite).ย  For the white wine, I just use whatever I have on-hand (usually a chardonnay).

โ€ข  In a large pot, heat the vegetable broth and water to a simmer.  Add the bay leaves and rice.  Simmer, covered, until the rice is done and pretty much all the liquid has been absorbed.  This can take 30 โ€“ 40 minutes, or more.

โ€ข  Preheat the oven to 400ยฐF.

โ€ข  While the rice is cooking, and in a separate large pot or wok, sautรฉ the onions and bell peppers with a few Tbsp. of olive oil over med-high heat until the onions become translucent, stirring regularly.

โ€ข  Add the garlic to the onions and peppers and continue to sautรฉ for another couple of minutes.

โ€ข  Next add the white wine, tomatoes, paprika, salt, black pepper, and lemon juice to the onions and peppers.  Continue to cook for a few more minutes.  (there will be some liquid from the wine and veggies left; we want this)

โ€ข  When the rice is done, remove the bay leaves and transfer the rice to the other pot/wok with the vegetables.

โ€ข  Add the parsley as well and mix everything together.

โ€ข  Transfer the paella into a large (I use a 10ร—15 inch, but a 9ร—13 should work too) non-stick baking dish, spreading it out evenly across the dish.

โ€ข  Slice the (uncooked) sausage links and place the slices on top.

โ€ข  Add the chicken pieces to the top as well.

โ€ข  Cover with foil and bake for 40 minutes.
