Tortellini Soup
Introduction
A family recipe, this soup is one of those soul-warming meals that isnโt too heavy but still satisfying.ย The packages ofย tortelliniย I use are 9 oz. each, so I like to do one cheese and one spinach.ย You can also use ravioli, if you want, but itโs a bit more effort to eat because youโll need to cut the ravioli with a spoon as you eat from a bowl (tortellini are already spoon-size, so no cutting necessary).ย There is a long simmer time, so plan accordingly!

Ingredients
4ย ย cupsย vegetable broth
1ย ย ย yellow onions,ย diced
2ย ย 9 oz. packagesย tortellini
1ยฝย ย lbs. groundย sausage
2ย ย carrots, peeled and diced
1ย ย ย zucchini, peeled and diced
2ย ย 15 oz. cans tomato sauce
2ย ย 15 oz. cans fire roasted diced tomatoes
2ย ย Tbsp. garlic, minced (about 4 cloves)
4ย ย Tbsp. fresh oregano (or 2 Tbsp. dry)
4ย ย Tbsp. fresh parsley (or 2 Tbsp. dry)
2ย ย Tbsp. fresh basil (or 1 Tbsp. dry)
Olive oil
Variation:
You can substitute the ground sausage for sausage links (bratwurst or Italian). Just grill, slice, and add to the soup.
This helps add a little grill flavor that goes well with the fire roasted tomato.
Instructions
โข In a soup pot, sautรฉ the onions and carrots with a few Tbsp. of olive oil over med-high heat until the onions become translucent, stirring regularly.
โข Add the garlic and ground sausage and continue to sautรฉ, breaking the sausage up into small pieces with the spatula, until the sausage is cooked.
โข Add all remaining ingredients (except the zucchini and pasta) and simmer, covered, for 2 โ 3 hours.
โข Around 5 โ 10 minutes prior to serving, add the tortellini and zucchini. Continue to simmer until the tortellini is cooked.
