Sweet & Sour Chicken

Introduction
Such a great change-of-pace meal! Itโs sweet, itโs sour, itโs delicious. Iโve included a recipe to make your own sauce, but you can just as easily buy a couple jars of your favorite sauce, too. You can also use extra firm tofu instead of the chicken, if youโd like. Just cube the tofu, mix with the same coating, and bake at 400ยฐF for 30 minutes, flipping halfway through (you want the tofu to be a little crispy).

Ingredients
1ยฝย ย lbs.ย chickenย pieces, defrosted
4ย ย bell peppers,ย rough chopped
1ย ย ย large yellow onion, rough chopped
2ย ย 15 oz. cans pineapple tidbits
1 ย ย cupย scallions, chopped
2ย ย ย Tbsp. soy sauce
4ย ย ย Tbsp. garlic, minced (about 8 cloves)
2ย ย Tbsp. sesame oil
2ย ย ย Tbsp. all purpose flour
1ย ย ย tsp. ground cloves
1ย ย ย tsp. cinnamon
1ย ย ย tsp. black pepper
10ย ย servings white jasmine, or basmati rice
Olive oil
Sauce
1ย ย ย cup pineapple juice (from the can used above)
ยพ ย ย cup brown sugar, packed
ยผ ย cup rice vinegar
ยผ ย ย cup water
4ย ย Tbsp. corn starch
3ย ย Tbsp. soy sauce
2ย ย Tbsp. ketchup
Variation:
Substitute extra firm tofu (cubed) for the chicken and flip the tofu cubes halfway through the baking process.
Instructions
โข Preheat the oven to 350ยฐF.
โข If you are making your own sauce, do that now and follow the instructions below.
โข Add the chicken pieces to a large bowl. Drizzle the sesame oil and soy sauce on top. Mix well.
โข Sprinkle the cloves, cinnamon, flour, and black pepper onto the chicken. Mix well again, trying to get an even coating on all the chicken pieces.
โข Spread the chicken out on a non-stick baking sheet or baking mat into a single layer (try to not have any pieces stacked on top of each other, but itโs not the worst thing if they do stack a little). Bake for 30 minutes.
โข While the chicken is baking, in a large pot or wok heat a few Tbsp. of olive oil over med-high heat and sautรฉ the onion and bell peppers until the onions start to become translucent, stirring regularly.
โข Add the garlic and continue to sautรฉ for another couple minutes.
โข Add the remaining ingredients (except for the scallions), including the sauce and chicken (when finished baking). Simmer for about 10 minutes, uncovered, to let the sauce thicken.
โข Cook the rice according to package instructions.
โข Spoon the rice into bowls and top with the sweet and sour chicken mixture. Garnish with the scallions.
IF YOU ARE MAKING THE SAUCEโฆ
โข Strain and measure the pineapple juice from the cans you will use.
โข In a medium bowl, mix the water and corn starch together so there are no lumps.
โข Add the remaining sauce ingredients and mix well. Set aside until ready to use.
