Going Vegan Has Never Been So Easy

Fried Rice

Introduction

Probably the greatest leftover food of all time. Just as good 3 days after you make it! This is a really easy recipe to make, and it is restaurant quality. You can get creative with the veggies you use, too. I actually go half/half with peas and edamame beans. You can also throw in some watercress or bean sprouts. I recommend jasmine long grain rice, but any long grain will do fine. Avoid short because it tends to clump together, which we donโ€™t want. Kala namak can be tough to find in stores but is easy to order online (this gives us the egg flavor).

Total Time: 1 to 1ยฝ hours

Ingredients

Optional:
1 cup edamame beans

Instructions

โ€ขย  Cook the rice according to package instructions and set aside when done.
โ€ขย  In a large wok or soup pot, melt 2 Tbsp. of the butter over med-high heat. Add the tofu, breaking it up into pieces with a spatula. Cook for about 5 minutes, stirring regularly.
โ€ขย  Take 2 tsp. of the kala namak and sprinkle it over the top of the tofu. Stir everything around to mix it in. Then, take the remaining 2 tsp. and do the same thing.
โ€ขย  Remove the tofu into a bowl and set aside.
โ€ขย  In the same wok/pot, melt the remaining butter over med-high heat. Add the onion, carrots, bell peppers, and peas (and edamame, if using). Sautรฉ the veggies until the onions become translucent, stirring regularly.
โ€ขย  Add the garlic and sesame oil. Continue to sautรฉ for another minute or two.
โ€ขย  Add the remaining ingredients (except for the scallions). Continue to cook over med-high heat for another 5 minutes or so, stirring frequently.
โ€ขย  Remove from heat. Add the scallions and mix them in evenly.
