Chicken Pot Pie
Introduction
Fairly easy to make and a wonderful treat on a cold winter day.ย You can get creative with the veggies you put inside.ย I keep things pretty classic with onion, carrot, celery, and peas, but if you want some potatoes, turnip, or anything else, feel free (just make sure you cook them prior)!ย I usually make mine in a 9ร13 baking dish, but you could also use individual soup bowls (just adjust the dough topping accordingly) or a couple of 9 inch pie dishes.ย I like to use Pillsbury original Crescent Rolls, but you can use pie crust or evenย biscuitย dough, if youโd like.

Ingredients
1ย ย ย yellow onion,ย diced
4ย ย celery ribs, diced
3ย ย carrots, peeled and diced
2ย ย cupsย vegetable broth
2ย ย cups peas (about 8 oz.)
1ยฝ ย cupsย milk
1ยฝ ย lbs.ย chickenย pieces
ยพย ย cupย butter
ยพย ย all purpose flour
1ย ย ย 8 oz. tube of crescent rolls (or 1 pie crust orย biscuitย dough)
1ย ย ย Tbsp. garlic, minced (about 2 cloves)
1ย ย ย Tbsp. dry thyme
1ย ย ย Tbsp. dry parlsey
1ย ย ย ย Tbsp. dry oregano
1ย ย ย tsp. salt
1ย ย ย tsp. black pepper

Instructions
โข In a medium pot, boil the carrots, celery, and peas in water for about 30 minutes to soften them. (If using different veggies, cook until they are fork-tender)
โข In a small pan, heat about 1 Tbsp. of olive oil over medium heat and sautรฉ the onions until they start to become translucent, stirring regularly.
โข Add the garlic and continue to sautรฉ for another couple of minutes. Remove from heat and set aside when done.
โข When the vegetables are done boiling, drain and also set aside until ready to use.
โข Preheat the oven to 350ยฐF.
โข In a large pot, melt the butter over low heat. Add the flour ยผ cup at a time and whisk into the flour so there are no lumps. Repeat until all the flour has been added.
โข Continue to cook the butter/flour over low heat for a few more minutes, stirring frequently.
โข Add the salt, pepper, thyme, parsley, and oregano to the butter mixture and continue to stir. Keep cooking for a few minutes to let the flavors start to release.
โข Add the milk and vegetable broth to the pot ยฝ cup at a time, stirring in completely between additions. Mix everything well so that there are no lumps.
โข Continue to cook the broth/milk mixture over low heat (uncovered) for about 10 minutes to let it thicken. Stir frequently, as the areas right above the heat source will thicken (and possibly burn) quickly.
โข When the sauce is thick enough (it should easily coat the back of a spoon), add in the boiled veggies, the sautรฉed onion, and the chicken pieces. Mix everything together well. Continue to cook over low heat until the chicken has warmed through.
โข Pour the mixture into a casserole dish (or pie dishes or individual soup bowls, if using). Spread everything out evenly.
โข Top with the crescent roll dough (or pie dough or biscuit dough, if using). Everything is cooked except for the dough, so we just need to bake long enough to get the dough to brown. For crescent rolls, this takes about 20 โ 25 minutes.
