Peanut Butter Blossoms

Introduction
These are my absolute favorite cookie! I love peanut butter… mix in a hint of chocolate, and I’m in heaven. Unfortunately, Hershey does NOT make a vegan Hershey Kiss at the time of creating this. Instead, I order these from Amazon, which are honestly just as good: Smooches. Due to the peanut butter and actual butter, these do get a little greasy when you’re dealing with the dough. But it all gets absorbed and bakes into a soft, delicious cookie in the end.
I personally believe that Peter Pan is the BEST peanut butter out there, but you can use whichever is your personal favorite.
The dough will get pretty thick, so I really recommend a stand mixer.
This should make about 2 dozen cookies.
Total Time: about 30 minutes + cool time
Instructions
โขย Preheat the oven to 375ยฐF.
โขย In a bowl, combine the flour, baking powder, and salt.
โขย In a separate bowl (such as the stand mixer bowl), mix the peanut butter and melted butter.
โขย Add the brown sugar, sugar, and vanilla to the butter mixture and mix until smooth.
โขย In a small blender (I like to use a Bullet), blend the flaxseed and 6 Tbsp. of water until gooey. When done, add the butter/sugar mixture.
โขย Add the remaining ยพ cup of water to the butter mixture as well.
โขย Slowly add in the flour mixture about ยผ cup at a time. Allow the flour to completely mix before adding more.
โขย After all of the flour mixture has been incorporated into the dough, take a large spoon and spoon some dough into your hand. Roll the dough into about 1ยฝ inch balls and place the balls in a non-stick baking sheet or baking mat.
โขย Bake for 15 minutes.
โขย While baking, go ahead and pull the foil wrappers off of the Smooches so they are ready.
โขย Once baking is complete, take a Smooch and gently press down into the cookie. Allow the cookies to completely cool on the baking sheet. The heat from the cookies and sheet will slightly melt the Smooch, helping it to stick to the cookie.
(It will take a little bit, maybe about an hour, to allow the chocolate to fully solidify back to room temperature. If you are in a hurry, you can gently remove the cookies from the tray and place them in the fridge for a little bit to speed up the process)
