Chocolate & Chocolate Cookies
Introduction
Love chocolate?ย This will sate your appetites.ย A chocolate cookie with chocolate chips added in for good measure.ย You can also add in ยฝ cup of chopped walnuts or pecans, too, if youโre feeling dangerous.ย This will make about 16-18 cookies.
Total Time: around 30 minutes
Ingredients
1ย ย ย cup all-purpose flour
ยฝ ย ย cup cocoa powder
ยฝ ย ย cup sugar
ยฝย ย cup brown sugar, packed
ยฝ ย ย cupย butter, melted
ยฝย ย ย cupย chocolate chips
2ย ย tsp. baking powder
1ย ย ย tsp. vanilla extract
2ย ย Tbsp. ground flaxseed
5ย ย Tbsp. water
Instructions
โข Preheat the oven to 350ยฐF.
โข In a small blender (I use a Bullet), blend the flaxseed and water until gooey (around 30 seconds).
โข Using an electric mixer (I use a stand mixer), mix together the flaxseed goo, melted butter, sugar, brown sugar, and vanilla. Make sure there are no lumps.
โข Start adding the flour ยผ cup at a time, making sure the flour is fully incorporated before adding the next ยผ cup.
โข Similarly, add the cocoa powder ยผ cup at a time, making sure it too is fully incorporated.
โข Add the baking powder and mix well, scraping down the sides of the bowl as needed. Again, ensure there are no lumps.
โข Add the chocolate chips and mix so they are evenly distributed.
โข Using a spoon, place a golf-ball size (about 2-3 Tbsp.) amount of the dough onto a non-stick baking sheet or baking mat. Continue until all the dough has been used.
โข Bake for 12 โ 15 minutes. You obviously wonโt be able to tell if the cookies have browned or not, so go with 12 minutes if you want a softer cookie and 15 minutes if you want a slightly crunchier cookie.
โข Allow the cookies to cool on the baking sheet for 15 โ 20 minutes before removing from the sheet. They will do just a tiny bit more cooking during this time.
