Orange Cranberry Muffins

Introduction
Such a wonderful start (or end) to the day! These muffins are pretty sweet, so no one will judge you for eating them for dessert. The sweetness is balanced well with just a hit of sour from the orange and a splash of tang from the cranberries. The glaze will often absorb into the muffin, so if you want a little less sweetness, you can always skip it. The orange juice concentrate is the stuff that comes in the frozen cylinders (near the frozen fruit in most grocery stores). This should make about 2 dozen muffins.

Ingredients
3ยฝ cups all purpose flour

cups milk
1ยฝ cups sugar

cup vegetable or sunflower oil
1 cup dried cranberries
ยผ cup orange juice concentrate
3 oranges, zest only
2 tsp. orange extract
2 tsp. baking powder
ยฝ tsp. baking soda
1 tsp. salt
Glaze:
ยฝ cup brown sugar, packed
ยผ cup powdered sugar
ยผ cup butter, melted
3 Tbps. milk
ยฝ tsp. vanilla extract
ยผ tsp. orange extract
Instructions
โข Bring a couple of cups of water to boil in a small pot. Add the dried cranberries, remove from heat, and let them sit for about 5-7 minutes to reconstitute. Otherwise the cranberries will absorb the moisture from the muffin, which we don’t want.
โข Preheat the oven to 350ยฐF and prepare 2 muffin pans with liners. We will want to work quick once the batter is done, so it’s best to get this ready to go early.
โข Sift the flour, baking powder, and baking soda into a large bowl. Set the bowl aside when done.
โข In a separate bowl, mix the remaining ingredients (except the cranberries) and stir to combine.
โข Combine the two bowls of ingredients together and whisk them until there are no lumps. Try not to whisk any more than is necessary – we don’t want to undo the sifted flour and baking powder/soda (these help with fluffiness).
โข Add the cranberries and fold them into the batter.
โข Using a large spoon or ladle, transfer some of the batter into the muffin liners. You’ll want to fill the liners to about 80% full.
โข Once all the batter has been used, place the pans in the oven and bake for 13-15 minutes.
โข If you are also making the glaze, combine the glaze ingredients in a small pot under very low heat. Mix everything together so there are no lumps. Cook for about 5 minutes and then remove from heat to allow the glaze to thicken a little.
โข When the muffins are done baking, take them out and let them cool for 15 or so minutes.
โข If you made the glaze, take a spoon and drizzle a little glaze over the top of the muffins.
