Coffee Cake Muffins

Introduction

I’ve always found coffee cake to be more of a dessert than a breakfast item, but I guess I could say the same about donuts, too. Regardless, these muffins will probably make you completely forget about your actual coffee. This should make 12 muffins.

My personal favorite is raspberry, but you can use whatever jam/preserves are your favorite (blackberry, blueberry, peach…).

โ€ข  Preheat the oven to 350ยฐF.

โ€ข  Prep a muffin pan by adding in the muffin liners.

โ€ข  In a large bowl, add the all purpose flour, almond flour, sugar, baking powder, baking soda, and salt.

โ€ข  In a separate small bowl, add the 1 cup of milk, vinegar, almond extract, and melted butter.

โ€ข  Make sure your oven is fully preheated before proceeding!

โ€ข  Add the wet ingredients into the bowl with the dry ingredients. Use a whisk to mix everything together, but only so much that there are no lumps; do NOT overwork the batter.

โ€ข  Using a regular dinner spoon, take a heaping spoonful of the batter and dump it into a muffin liner. Spread it out so it covers the entire bottom of the liner. Repeat until all 12 of the muffin liners have a dollop of batter in them.

โ€ข  Now use another spoon (or the same one; I just lick off all the batter ๐Ÿ™‚ ) and spoon some of the jam/preserves on top of the batter in the liners. You only need maybe half as much jam/preserves as you needed for the batter, so this should not be heaping.

โ€ข  Take another heaping spoonful of the batter and place it on top of the jam/preserves in each liner, spreading it out to the edges. Repeat until all of the muffin liners are about 80-90% full.

โ€ข  Bake for 30 minutes, or until a toothpick comes out clean from the middle of a muffin.

โ€ข  When the muffins are done, take them out and let them cool in the muffin pan.

โ€ข  While the muffins are cooling, toast the almond slices by laying them out on a small, non-stick baking sheet or baking mat. Bake them for ONLY 2-3 MINUTES. They will toast very fast.

โ€ข  In a small bowl, add the powdered sugar and remaining 2 Tbsp. of milk. Use a fork or a small whisk to combine into a frosting.

โ€ข  When the muffins have cooled (around 20 – 30 minutes), use a spoon to drizzle the frosting over the top of the muffins. Lastly, sprinkle the toasted almond slices on top (they should stick to the frosting).
