Introduction

I personally believe that Peter Pan is the BEST peanut butter out there, but you can use whichever is your personal favorite.

The dough will get pretty thick, so I really recommend a stand mixer.

This should make about 2 dozen cookies.

Total Time: about 30 minutes + cool time

Ingredients

โ€ขย  Preheat the oven to 375ยฐF.
โ€ขย  In a bowl, combine the flour, baking powder, and salt.
โ€ขย  In a separate bowl (such as the stand mixer bowl), mix the peanut butter and melted butter.
โ€ขย  Add the brown sugar, sugar, and vanilla to the butter mixture and mix until smooth.
โ€ขย  In a small blender (I like to use a Bullet), blend the flaxseed and 6 Tbsp. of water until gooey. When done, add the butter/sugar mixture.
โ€ขย  Add the remaining ยพ cup of water to the butter mixture as well.
โ€ขย  Slowly add in the flour mixture about ยผ cup at a time. Allow the flour to completely mix before adding more.
โ€ขย  After all of the flour mixture has been incorporated into the dough, take a large spoon and spoon some dough into your hand. Roll the dough into about 1ยฝ inch balls and place the balls in a non-stick baking sheet or baking mat.
โ€ขย  Bake for 15 minutes.
โ€ขย  While baking, go ahead and pull the foil wrappers off of the Smooches so they are ready.
โ€ขย  Once baking is complete, take a Smooch and gently press down into the cookie. Allow the cookies to completely cool on the baking sheet. The heat from the cookies and sheet will slightly melt the Smooch, helping it to stick to the cookie.
(It will take a little bit, maybe about an hour, to allow the chocolate to fully solidify back to room temperature. If you are in a hurry, you can gently remove the cookies from the tray and place them in the fridge for a little bit to speed up the process)
