Introduction

Probably the greatest leftover food of all time. Just as good 3 days after you make it! This is a really easy recipe to make, and it is restaurant quality. You can get creative with the veggies you use, too. I actually go half/half with peas and edamame beans. You can also throw in some watercress or bean sprouts. I recommend jasmine long grain rice, but any long grain will do fine. Avoid short because it tends to clump together, which we don’t want. Kala namak can be tough to find in stores but is easy to order online (this gives us the egg flavor).

1 cup edamame beans

Instructions


โ€ข  Cook the rice according to package instructions and set aside when done.
โ€ข  In a large wok or soup pot, melt 2 Tbsp. of the butter over med-high heat. Add the tofu, breaking it up into pieces with a spatula. Cook for about 5 minutes, stirring regularly.
โ€ข  Take 2 tsp. of the kala namak and sprinkle it over the top of the tofu. Stir everything around to mix it in. Then, take the remaining 2 tsp. and do the same thing.
โ€ข  Remove the tofu into a bowl and set aside.
โ€ข  In the same wok/pot, melt the remaining butter over med-high heat. Add the onion, carrots, bell peppers, and peas (and edamame, if using). Sautรฉ the veggies until the onions become translucent, stirring regularly.
โ€ข  Add the garlic and sesame oil. Continue to sautรฉ for another minute or two.
โ€ข  Add the remaining ingredients (except for the scallions). Continue to cook over med-high heat for another 5 minutes or so, stirring frequently.
โ€ข  Remove from heat. Add the scallions and mix them in evenly.
