Introduction

I prefer a crunchier potato skin, so I leave my potatoes uncovered when I bake them. But if you prefer a softer skin, then you can wrap them in foil to bake. I have no idea how large your potatoes are, so the bake time will be variable.

Total Time: 1ยฝ to 2 hours (not counting the Queso)

โ€ข  Preheat the oven to 400ยฐF.

โ€ข  Thoroughly clean the potatoes. The last thing you want is a bunch of gritty dirt when eating.

โ€ข  If you are going to wrap the potatoes in foil, go ahead and lay out large rectangles of foil to place the potatoes on.

โ€ข  Over a sink, drizzle a little olive oil on the potato and rub it around the surface, coating the entire potato.

โ€ข  Next, rotate the potato around while sprinkling some garlic salt over the potato pretty liberally. It depends on the size of your potatoes, but around ยฝ tsp. is how much you should be using per potato.

โ€ข  Place the potato on a rectangle of foil or directly onto a non-stick baking sheet or baking mat.

โ€ข  Repeat for the remaining potatoes.

โ€ข  Take a fork and stab the top of the potatoes 3 โ€“ 4 times. This will let some of the heat escape the potato while it bakes.

โ€ข  Bake for 1 โ€“ 1ยฝ hours, depending on the size. You should be able to again stab them with a fork, but the fork should be able to penetrate the potato easily.

โ€ข  While the potatoes are baking, cook the bacon according to package instructions. Chop into pieces when done and set aside.

โ€ข  Let the potatoes cool for about 10 minutes prior to loading with the sour cream, Queso, bacon, and scallions.
