Chocolate Chip Cookies
Introduction
Classic.ย This recipe should yield about 2 dozen cookies.ย Feel free to add some chopped nuts (such as walnuts, about 1 cup) if youโre into that kind of thing.ย I like my cookies soft and chewy, but if you want a thinner, crunchier cookie you can add a little more water and bake for an extra few minutes.
Total Time: 20 โ 30 minutes
Ingredients
2ยผย ย cups all-purpose flour
ยพย ย ย cup brown sugar, packed
ยพ ย ย cup sugar
ยฝย ย cupย butter, melted
1ย ย ย ย cupย chocolate chips
2ย ย ย tsp. vanilla extract
2ย ย ย tsp. baking powder
1ย ย ย tsp. salt
2ย ย ย Tbsp. ground flaxseed
7ย ย ย Tbsp. water
Instructions
โข Preheat the oven to 375ยฐF.
โขย Using a small blender (I like to use a Bullet), blend the flaxseed and water until gooey (about 30 seconds).
โข Using an electric stand mixer (or electric hand mixer, if you donโt have a standing one), mix the sugar, brown sugar, vanilla, salt, flaxseed goo, and melted butter until smooth.
โข Add the flour gradually, ยผ cup at a time. Make sure to keep count (you want a total of 9 โ ยผ cups)! Let the flour mix in before adding the next ยผ cup.
โข Add the baking powder. Scrape down the sides of the bowl to make sure all the ingredients are getting mixed well. Mix for a couple of minutes on low to low-med.
โข The dough will be pretty thick. This will help to make thick, chewy cookies. If you want thinner, crunchier cookies, you can add another couple Tbsp. of water.
โข Using a spoon, gather about a golf-ball sized lump of dough and make it into a ball. Place on a non-stick baking sheet or baking mat. Repeat until all the dough has been used.
โข Bake for 13-15 minutes, or until the edges are just starting to brown. If you want a crispier cookie, you can let them bake for an extra couple of minutes.
โข Remove from the oven and let the cookies cool ON THE BAKING SHEET. Do not transfer the cookies to a cooling rack; the last little bit of cooking will happen from the hot baking sheet.
โข Once cooled, remove from the sheet and transfer to an air-tight container.
