Paella
Introduction
A Spanish classic, this recipe isnโt very difficult and tastes fantastic.ย Unfortunately, I havenโt found a good seafood substitute, so instead weโll use veganย chickenย andย sausage.ย Spanish rice (the yellow rice with saffron; I like to use Vigo brand) is just delicious, and I prefer spicy Italian sausage to give this a little kick (but feel free to use your favorite).ย For the white wine, I just use whatever I have on-hand (usually a chardonnay).

Ingredients
2ย ย yellow onions,ย diced
4ย ย bell peppers, diced
6ย ย Roma tomatoes, diced
30ย oz. Spanish / Arborio rice (with saffron)
6ย ย cupsย vegetable broth
4ย ย cups water
ยพ ย lb.ย chickenย pieces
ยพ ย lb.ย sausageย links
1ย ย ย cup fresh parsley, chopped
ยฝ ย ย cup white wine
4ย ย Tbsp. garlic, minced (about 8 cloves)
2ย ย Tbsp. lemon juice
2ย ย bay leaves
2ย ย tsp. paprika
1ย ย ย tsp. salt
1ย ย ย tsp. black pepper

Instructions
โข In a large pot, heat the vegetable broth and water to a simmer. Add the bay leaves and rice. Simmer, covered, until the rice is done and pretty much all the liquid has been absorbed. This can take 30 โ 40 minutes, or more.
โข Preheat the oven to 400ยฐF.
โข While the rice is cooking, and in a separate large pot or wok, sautรฉ the onions and bell peppers with a few Tbsp. of olive oil over med-high heat until the onions become translucent, stirring regularly.
โข Add the garlic to the onions and peppers and continue to sautรฉ for another couple of minutes.
โข Next add the white wine, tomatoes, paprika, salt, black pepper, and lemon juice to the onions and peppers. Continue to cook for a few more minutes. (there will be some liquid from the wine and veggies left; we want this)
โข When the rice is done, remove the bay leaves and transfer the rice to the other pot/wok with the vegetables.
โข Add the parsley as well and mix everything together.
โข Transfer the paella into a large (I use a 10ร15 inch, but a 9ร13 should work too) non-stick baking dish, spreading it out evenly across the dish.
โข Slice the (uncooked) sausage links and place the slices on top.
โข Add the chicken pieces to the top as well.
โข Cover with foil and bake for 40 minutes.
