Meatloaf
Introduction
This is an old family recipe that I updated to be vegan,ย and itโs just as good!ย The meatloaf itself is pretty easy and doesnโt take long, but I would very much recommendย mashed potatoesย to go with it (which can take a while) and maybe even aย green bean casserole.ย The casserole you could easily make beforehand and refrigerate, if youโd like.

Ingredients
1ยฝย ย lbs.ย ground beef
ยพย ย cupย milk
1ย ย cup bread crumbs (check that they are vegan!ย Some arenโt.)
2ย ย Tbsp. ground flaxseed
6ย ย Tbsp. water
ยฝย ย white onion,ย diced small
1ย ย Tbsp. Worcestershire sauce
2ย ย Tbsp. dry parsley
2ย ย Tbsp. garlic, minced (about 4 cloves)
2ย ย tsp. dry oregano
1ย ย tsp. salt
Olive oil
Instructions
โข Preheat the oven to 350ยฐF.
โข In a pan, sautรฉ the onions with a Tbsp. of olive oil over med-high heat until they start to become translucent, stirring regularly.
โข Add the garlic and continue to sautรฉ for another couple of minutes.
โข In a small blender (I like to use a Bullet), blend the water and flaxseed until it becomes gooey (about 30 seconds).
โข In a bowl, combine all the ingredients, including the flaxseed and onions. Use your hands to mix everything together well.
โข Transfer the bowlโs contents to a non-stick 8x4x4 inch loaf pan. (Even though my pan is non-stick, I still give it a quick once-over with a non-stick spray)
โข Gently push down on the meat to make sure it is even across the pan and there are no air pockets anywhere in the middle.
โข Bake for 45 minutes.
