Tomato & White Bean Stew
Introduction
Hearty and delicious, this soup warms the soul on a cold day.ย I like to add pasta to my soup, but if youโre watching carbs feel free to leave that out.ย If using pasta, smaller pastas work best to keep everything bite-sized.ย You can also substitute your favorite beans.ย I like to use cannellini, white navy, and butter beans.

Ingredients
8ย ย cupsย vegetable broth
2ย ย yellow onions,ย diced
4ย ย celery ribs, diced
1 ย ย 6 oz. can tomato paste
3ย ย 15 oz. cans fire roasted diced tomatoes
3ย ย 15 oz. cans white beans
4ย ย Tbsp. garlic, minced (about 8 cloves)
1ย ย ย lb. pasta
2ย ย Tbsp. sugar
2ย ย tsp. paprika
2ย ย tsp. cumin
2ย ย tsp. salt
1ย tsp. black pepper
Olive oil
Optional Toppings: Parmesan cheese

Instructions
โข In a soup pot, sautรฉ the onions and celery with a few Tbsp. of olive oil over med-high heat until the onions become translucent, stirring regularly.
โข Add the garlic, paprika, and cumin and continue to sautรฉ for another 2-3 minutes.
โข Add all remaining ingredients (except the pasta) and simmer, covered, for 30 minutes.
โข Around 15 โ 20 minutes prior to serving, add the pasta. Continue to simmer, covered, until the pasta is cooked. The pasta will absorb most of the liquid.
โข Ladle into a bowl and add any additional toppings.
