Root Veggie Stew & Dumplings
Introduction
This is another one where I REALLY recommend you donโt let the picture fool you; this is one of the richest, most savory soups I have ever had. While this will take a lot of prep time (a lot of veggies to chop!), it is absolutely worth the effort.ย You can make your ownย Biscuitย dough, if youโd like, but I usually just buy a tube (Pillsbury or other).ย Store bought โOriginalโ biscuits should be vegan, but check the label to make sure.ย It may say โmight contain milk ingredientsโ, but that just means it was processed in the same facility as other products that do contain milk ingredients.

Ingredients
1ย ย ย sweet or yellow onion,ย diced
2ย ย carrots, peeled and diced
1ยฝย lbs. golden potatoes, diced
1ย ย ย rutabaga, peeled and diced
1ย ย ย turnip, peeled and diced
2ย ย large parsnips, peeled and diced
ยฝย ย cup fresh parsley, chopped (not dry)
3ย ย celery ribs, diced
1ย ย ย green bell pepper, diced
3ย ย Tbsp. garlic, minced (about 6 cloves)
2ย ย bay leaves
1ย ย ย 6 oz. can tomato paste
1ย ย ย cup dry red lentils
4ย ย cupsย vegetable broth
4ย ย cups water
ยผย ย cup soy sauce
1ย ย ย Tbsp. dry oregano
1ย ย ย tsp. salt
1ย ย ย tsp. black pepper
1ย ย ย 16 oz. package of biscuit dough

Instructions
โข In a soup pot, sautรฉ the onion, carrot, celery, and bell pepper with a few Tbsp. of olive oil over med-high heat until the onions start to become translucent, stirring regularly.
โข Add the garlic, parsley, and oregano and continue to cook for another couple of minutes.
โข Add all other ingredients (except the biscuit dough) and simmer for 2 โ 3 hours, covered.
โข The liquid level should come right to the top of the veggies. If needed, add a little more water until all of the veggies are just barely breaking the liquid surface.
โข Around 15 minutes prior to serving, chop the biscuit dough into pieces. I usually make 3 cuts in one direction and then 3 cuts in the other, resulting 4ร4 pieces of each biscuit. Add the chopped dough to the soup and mix it in.
โข Cover and continue to cook for another 10 to 15 minutes. The dough should have risen in the pot. Some of the dough will also have dissolved into the liquid, lending some sweetness. The more you stir, the more will dissolve, so do NOT stir any further after the first mix-in!
โข Ladle into bowls and serve.
