Pasta Bolognese
Introduction
One of the classic Italian pasta sauces is Bolognese (also known as meat sauce).ย You can use this recipe with any type of pasta, including in a lasagna.ย I like to use a veggie pasta, personally.ย For the red wine, I prefer something heavier, like a Zinfandel or Cabernet, but feel free to use what you have, since we donโt need much.ย The addition of the milk helps to cut the acidity of the tomatoes.ย Note the simmer time and plan accordingly!ย I also recommend someย garlic breadย to go along with this meal.

Ingredients
1ยฝย lbs.ย ground beef
45ย oz. tomato sauce
1ย ย ย large carrot,ย diced small
1ย ย ย celery stalk, diced small
1ย ย ย small white onion, diced small
ยฝย ย cup red wine
2ย ย bay leaves
1ย ย ย Tbsp. dry basil
1ย ย ย Tbsp. dry oregano
1ย ย ย Tbsp. Worcestershire sauce
4ย ย Tbsp. garlic (about 8 cloves)
1ย ย ย tsp. salt
1ย ย ย tsp. black pepper

ย ย cupย milk
2ย ย lbs. pasta
Olive oil
Optional Toppings:
Parmesan cheese or cottage cheese (I donโt like cottage cheese, so youโre on your own finding a good brand!)
Instructions
โข In a large pot, sautรฉ the onion, carrot, and celery with a few Tbsp. of olive oil. Cook until the onion starts to become translucent, stirring regularly.
โข Add the garlic and continue to sautรฉ for another minute or two.
โข Add the ground beef. Continue to sautรฉ and break up the meat into small pieces using the spatula.
โข When the meat is almost done, add the red wine. Continue to cook for another minute to let some of the liquid evaporate.
โข Add the remaining ingredients (except for the milk and pasta), mix everything together, cover, and simmer on low heat for 2-3 hours.
โข When the sauce is getting close to done, cook the pasta according to package instructions.
โข A couple of minutes prior to serving, add the milk to the sauce and stir it in.
