Going Vegan Has Never Been So Easy

Introduction

Total Time: 1ยฝ to 2 hours (not counting the cheese)

Ingredients

2ย  ย  24 oz. jars pasta sauce

Instructions

โ€ข  Thaw the spinach either by leaving out for a few hours or by microwaving on low level for a few minutes.  Once thawed, mix the spinach with the cheese, parsley, and black pepper.  Cover and refrigerate until ready.

โ€ข  Preheat the oven to 350ยฐF.

โ€ข  Mix the crepe ingredients together in a bowl and whisk very well so that there are no lumps.

โ€ข  Heat a medium non-stick pan or skillet (9 inch or so) under medium heat.  We do NOT want to use butter or non-stick spray, as these will affect the size and shape of our crepes.

โ€ข  Using a ladle, transfer a small amount (about ยผ cup) of the batter into the hot pan, and title the pan around so that the batter coats the entire pan in a circle.  You should be left with a thin circle of batter in the pan.  (it may take a couple tries to get a feel for how to do this)

โ€ข  Let the crepe cook for a minute or two, or until the underside starts to brown a little.  Then, using a very thin spatula, flip the crepe and continue to cook until the other side starts to brown.

โ€ขย  When the crepe is done, remove it from the pan and place it on a sheet of wax or parchment paper to cool.ย  Repeat until all the batter has been used.ย  Do NOT stack the crepes on top of each other on the paper; keep them separate so they donโ€™t stick to each other.

โ€ข  Spread about ยฝ of a jar (about 1 cup) of the pasta sauce on the bottom of a large baking dish (I use a 10ร—15 inch, but you can also use a 9ร—13).  This will help keep the crepes from sticking.  (if using Bolognese, coat the bottom with butter or a non-stick spray instead of spreading the sauce).

โ€ข  Spoon about โ…“ to ยฝ cup of the Ricotta mixture into a crepe and roll the crepe.  The easiest way to do this is to place the filling a little off-center, then wrap the shorter side of the crepe over the top of the filling and tucking it underneath the filling.  Keep rolling through the longer side.

โ€ข  Place the rolled crepe into the baking dish.  Repeat until all of the crepes have been used.

โ€ข  Spread the remaining sauce on the top of the crepes.  Bake for 45 minutes or until bubbly.
