Apple Maple Cinnamon Cupcakes

Introduction
This could also be made into a cake, but you’ll need to increase the bake time. For a cake, I recommend a layer cake, which means you should double the apples and cake batter below (essentially each layer equates to 1 listed recipe).
These do take a little extra time because we need to stew the apples. But, you can also do that (as well as make the frosting) the day prior, too. Just make sure you let the apples and frosting get back to room temperature before adding to the cupcakes.
You’ll want a stand mixer for the frosting (or at least an electric hand mixer) because the ingredients can be a bit hard to work with.
This should make 2 dozen cupcakes. If there are any leftover, you should refrigerate them because of the apples!

Ingredients
Apples:
3 granny smith apples, peeled and diced small
ยผ cup brown sugar, packed
3 Tbsp. butter
3 Tbsp. maple syrup
Cupcakes:
1ยฝ cups milk
ยฝ cup vegetable oil
3 Tbsp. lemon juice
3 tsp. vanilla extract
1ยฝ cups sugar
3 cups flour, sifted
3 tsp. baking soda
1ยฝ tsp. baking powder
3 tsp. cinnamon
ยผ tsp. salt
24 cupcake liners
Frosting:
ยฝ cup butter, room temperature
ยฝ cup vegetable shortening
4 cups powdered sugar
2 Tbsp. milk
2 Tbsp. maple syrup
1ยฝ tsp. cinnamon
ยผ tsp. salt
Instructions
Stew the Apples
โขย Combine all of the apple ingredients in a medium pot and apply low heat.
โขย Stir occasionally for about an hour, or until the apples are soft and tender.
โขย When done, remove from heat, cover, and set aside. If making the day before, place into a sealable container and refrigerate. Just remember to allow the apples to come back up to room temperature before adding to the cupcake batter
Bake the Cupcakes
โขย Preheat the oven to 350ยฐF and place the cupcake liners in your cupcake baking pan.
โขย In a large bowl, combine the milk, vegetable oil, lemon juice, and vanilla.
โขย In a separate bowl, combine the flour, sugar, cinnamon, and salt. Make sure the flour is sifted!
โขย Before proceeding, make sure the oven is fully heated and your cupcake pan & liners are ready to go. We want to do this next bit quickly.
โขย Take about a cup of the dry ingredients and add it to the liquid ingredients. Use a whisk to mix well so there are no lumps. Continue with about a cup at a time, adding the dry ingredients to the liquid, until everything is combined and smooth (no lumps!).
โขย Add in most of the diced apples, leaving about 1ยฝ cups to garnish the tops of the cupcakes.
โขย Add the baking soda and baking powder, but use a spatula or spoon to gently mix them in (not a whisk).
โขย Using a large spoon, begin to transfer the batter to the cupcake liners. Transfer enough batter to fill the liner to about 75 – 80% full.
โขย When done, bake for 15-17 minutes, or until a toothpick comes out clean.
โขย After baking, keep the cupcakes in the baking pan and allow them to cool to room temperature.
Make the Frosting
โขย I recommend using a stand mixer for this because the vegetable shortening can be a bit of a pain. But an electric hand mixer will work too. Either way, make sure you’re using the whisk attachment.
โขย In a large bowl, add all of the ingredients except for the powdered sugar. Use a spoon or spatula to start working these ingredients together a little bit. Don’t worry, it will become easier once we start adding in the sugar.
โขย Add 1 cup of the powdered sugar and use the electric mixer to combine. For this first round especially, you’ll probably need to scrape the whisk attachment and sides of the bowl to get everything combined.
โขย Add in the remainder of the powdered sugar 1 cup at a time, incorporating completely each time and scraping the whisk and bowl as needed.
โขย If you’re making the frosting the day prior, place in a sealed container and refrigerate. Just make sure to bring the frosting back up to room temperature before applying to the cupcakes!
โขย Wait until the cupcakes are completely cooled (probably about an hour) before adding the frosting to the top. If you’re making cupcakes (not a layer cake) you’ll probably have quite a bit of frosting leftover.
โขย Once all the cupcakes have been frosted, take a spoon and garnish the tops with the remainder of the diced apples.
