Hash Brown Casserole

Introduction
If you haven’t made our Loaded Baked Potatoes yet, you may not know that our Queso pairs ridiculously well with potatoes. In fact, this casserole is almost identical to the Loaded Baked Potatoes, just using hash browns instead of a full-size Russets. And just like the baked potatoes, you can get super creative here, too. Try this with some diced jalapenos or avocado, meatless chili, or any other number of toppings. You can also substitute vegan Chorizo in for the bacon, if you’d like (I use Morning Star Farms chorizo).
I do recommend making the Queso the day before to save you time the day-of. The bake time is pretty long, so make sure you plan accordingly.
Total Time: 1ยฝ – 2 hrs (not counting the Queso)
Instructions
โขย Make the Queso.
โขย Preheat the oven to 350ยฐF.
โขย Cook the bacon and chop into pieces.
โขย Take the bag of hash browns and drop it on your countertop a few times to break up any chunks that may have frozen together.
โขย In a large bowl, mix all of the ingredients together, except for the scallions. Make sure you have a pretty even distribution of all the ingredients.
โขย In a 13×9 inch baking dish, take some cold butter and use a napkin or paper towel to grease the dish. This will help the casserole to not stick as much.
โขย Transfer the hash browns to the baking dish and spread out evenly.
โขย Bake for 1 hr & 15 minutes.
โขย After the bake time has been reached, turn on the broiler. Broil for 3-5 minutes to get the top a little bit brown and crispy.
โขย Let the casserole cool for a bit, then spread the scallions on top and serve.
